Study: Celiac disease rates up 400%

New study results from Mayo clinic show that Celiac disease rates are 4 times higher than rates of 50 years ago. While the research study is interesting and the results are astonishing, I can't help but wonder if (and I was thinking this even before I read the last paragraph) that processed foods - often containing gluten - have become a crutch for our on-the-go, convenience-dependent society. I also wonder if the increase in awareness and research (though we still have a long way to go) of Celiac disease in the medical field and in general has boosted the number of diagnoses.
